La Table is not a training simulation — it is a fully operational fine-dining restaurant open to the public, located on the Özyeğin University campus. Students enrolled in Diplôme de Cuisine and Diplôme de Pâtisserie programmes rotate through kitchen and front-of-house roles as part of their professional formation.
Every dish that leaves the kitchen has been prepared using Le Cordon Bleu technique, plated to programme specification, and approved by a supervising chef-instructor before service. Guests receive the same quality and care they would expect from a professional restaurant — because that is precisely what it is.
Students rotate through all stations — entrées, mains, sauces, pâtisserie, plating — building speed and consistency under conditions that mirror a genuine professional kitchen. Chef-instructors lead the brigade, with students acting as the full kitchen team.
Cuisine students also spend time on the floor — taking orders, recommending dishes, timing courses, and developing the hospitality awareness that modern culinary careers require. Fine dining is as much about service as it is about cooking.
At Superior level, students participate in menu development sessions — proposing dishes based on seasonal ingredients, applying classical French technique, and presenting their creations for instructor critique before they go on the menu.
La Table welcomes university staff, guests from the wider community, and — during special events — culinary professionals and journalists. Students cook knowing that every service is evaluated not just by instructors, but by real guests with real expectations.
La Table operates as an integral part of the Le Cordon Bleu Istanbul curriculum. It is not open for public reservations. Service is reserved for the university community, programme guests, and invited visitors during the academic calendar.
